Simple Chicken Marinade

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1/4 balsamic vinegar*
  • 1/2 of 1 lemon, juiced
  • 3 cloves garlic, minced finely
  • 2 T brown sugar
  • 2 T honey**
  • 2 T soy sauce
  • 1 T dijon mustard
  • 1 t dried parsley
  • 1 t onion powder
  • 1/2 t black pepper, to taste

Instructions

  1. Combine all ingredients in a bowl or large glass measuring cup.
  2. Add marinade to 4 chicken thighs or breasts. You can marinate your chicken for up to 12 hours, or use immediately!
  3. This is also a great marinade for chicken drumsticks, wings, seafood, pork, or veggies! You can't go wrong.

Notes

*Substitute for whatever vinegar you prefer, or have on hand! I have done champagne vinegar and really enjoyed the outcome.

**Honey can be subbed for maple syrup, agave, or another 2 T of brown sugar. I like the caramelization honey adds, but be careful not to let it burn when cooking.
